Mango Salad

Raise your hand if you are always looking for simple, healthy and tasty lunches! This is one of my favorite salads. The mango tops it off and makes for a party in your mouth!

Salad Ingredients:

  • 2-4 cups of baby spinach

  • 1 mango, diced

  • Goat Cheese, crumbled

  • Sliced Almonds

  • 1/4 cup sweet onion, thinly sliced

  • 1 lb Ground Turkey

Dressing Ingredients:

  • 1 1/2 tablespoons olive oil

  • 1/4 cup lemon juice

  • dried basil to taste

  • garlic powder to taste

  • salt & pepper to taste

  • 1 teaspoon honey

Directions for Dressing: Mix all ingredients together in a Mason Jar and store in the refrigerator.

Directions for Salad:

  1. wash all vegetables and assemble salad in a large bowl

  2. Brown the ground turkey in a skillet and make sure cooked through.

  3. Season meat with salt and pepper.

  4. Let the meat cool completely

  5. top 1/2 LB of meat on the salad

  6. pour dressing over the salad (you won’t need to use the entire jar)

  7. Serve and enjoy

Tip: save the rest of dressing and meat for lunch the next day!
